A place in the sun

Cassoulet is one of the classics of French cooking, and Le Riviera in Naples offers a superb rendition on a menu that embraces dishes from all around the Mediterranean. "Cuisine of the sun," the proprietors call it, and one of the shining examples is this rustic but soul-satisfying casserole of white beans, sausage and succulent chunks of duck confit tinged with anise.
